First post-New to a Gluten free life!

~This blog will be dedicated to myself and my family first and foremost, but I hope my friends and family will take a strong interest in passing along little tid bits of information, great blogs they see, awesome recipe's they would like to share.  I am realizing it is not all scary, I never really was "scared" more a feeling of being daunted by the unknown.  What I cannot eat everything and ANYTHING I want?  I have to think of what to eat now?  Be a label reader? Eeek!  But as I have been home healing, and coming to terms with the new diagnosis of Celiac disease, I am confident now more than ever this is the right choice for myself and my family.  The statistics I have read is that your children are more likely to inherit the disease or allergy if you will so my kids have now started the gluten free way of life.  My kids actually prefer veggies and veggie products such as the meatless chicken nuggets etc.  So if it means going to several stores to get the healthy items we need to stay HEALTHY then so be it!  I have been doing this for 3 solid weeks tomorrow(Friday) and I must say my stomach feels better and I feel better, mind you this damage I did will take more than a few weeks to heal but I think with time and great support and yummy recipe's from friends and family it is all easy peezy as a dear friend said to me last night! <3  All of the books I have read say to keep it simple in the beginning, less is more so I have been doing a lot of fresh veggies, salads, lean protein, lentils(LOVE!), and wraps that use gluten free corn tortillas or other types of wraps that you can find in your specialty markets or specialty food sections.  I also gave up dairy with the exception of low fat cheese and that helps as well.  I will be meeting with nutritionists over the next few weeks to get their take on how I am doing this, what I can add and what I need to take out.  Remember, there is so much information out there as I have learned and bounce these ideas off friends and family! More times than not they have great input as I have learned over the last 3 weeks!
